Mezcal & Sotol
Mezcal is not derived from the distinct tequila’s blue agave, but various other agave species. Mezcal has a smoky flavor. Sotol is a distilled spirit made from the “Desert Spoon” plant and is the state drink of Chihuahua. The Desert Spoon takes 15 years to mature and creates only one bottle of Sotol per plant.
