Huevos Rancheros

Originally served out on the range, this ranch-style breakfast dish is a combination of eggs served on fried corn tortillas smothered in a cooked salsa or sauce. A favorite “morning after” dish that starts the day with a zing – this hearty dish can be enjoyed any time of the day! We serve ours with a side of refried beans and rice.

Ingredients
  

  • 6-8 tbsp. vegetable oil to fry tortillas
  • 8 corn tortillas (6 in.)
  • 1 16 oz La Posta Hot Salsa*  jar
  • 8 eggs
  • ½ cup Cheddar or Monterey Jack cheese  shredded

Instructions
 

  • Preheat oven to 250°F and place four serving plates in preheated oven to warm.
  • In a medium saucepan over medium heat, heat salsa until bubbly, about 5 minutes, then reduce heat to low.
  • In a medium skillet, add oil and heat on high for 1 minute or until oil bubbles. Using tongs, carefully dip each tortilla into the oil, turning once, until the tortilla bubbles and is heated through, about 10 seconds per side. Transfer to paper towels to drain. Repeat with remaining tortillas.
  • In another skillet, scramble or fry eggs separately, as desired.
  • Place 2 tortillas slightly overlapping each other on a warmed plate. Plates will be hot – use caution. Place two eggs on top of tortillas on each plate and smother with warmed salsa. Sprinkle with cheese. 
  • Return to oven and heat until cheese is slightly melted, 3-4 minutes. Serve immediately. Great served with refritos, rice and Mexican slaw!

Notes

* By “replacing” our La Posta Hot Salsa in the above recipe, the variations for this tasty yet simple dish are only limited by your gastronomic sense of adventure. For a red and green chile flavor (e.g., “Christmas” as we say in New Mexico), use our La Posta Christmas Salsa. For Red Chile Huevos Rancheros, use our La Posta Sun Dried Red Chile Sauce. For Hatch Green Chile Huevos Rancheros, use our La Posta Green Chile Sauce.
