Green Enchiladas

La Posta has been dishing up delicious enchiladas – pancake style -- since 1939. We savor the fresh goodness of New Mexico Hatch green chile which is now available to you with our La Posta Green Chile Sauce. Enjoy them for brunch, lunch, or dinner!

Ingredients
  

  • 12 corn tortillas 6-inch
  • ½ cup large white or yellow onion chopped
  • 3 cups Monterey Jack or Asadero cheese
  • 1 16 oz La Posta Hatch Green Chile Sauce jar
  • 1 cup vegetable oil
  • 2 cups iceberg lettuce shredded
  • 1 large tomato chopped for garnish

Instructions
 

  • Preheat oven to 350 degrees. Set aside 1 cup of grated cheese for garnish.
  • In a medium skillet, add oil and heat on high for 1 minute or until oil bubbles. Using tongs, carefully dip each tortilla into the oil, turning once, until the tortilla bubbles and is heated through, about 10 seconds per side. Transfer to paper towels to drain. Repeat with remaining tortillas.
  • In a medium saucepan over medium heat, warm La Posta Green Chile Sauce. Place tortillas one at a time in sauce pan, and using a slotted spatula, pull tortilla out of sauce and transfer to plate. Place tortillas on four individual plates. Top each tortilla with about 1 oz. of grated cheese and about 1 tablespoon of chopped onion. 
  • Repeat with remaining tortillas, cheese, and onion. Each plate should have a three-layer stack of tortillas. Top with remaining cheese & sauce.
  • Bake each stacked plate in oven for 2-3 minutes or until cheese is melted. Caution when removing hot plates from oven. Garnish each plate, around the side, with equal amounts of lettuce and tomato.

Notes

• For over 84+ years, our most popular enchilada has been the La Posta Sour Cream Enchilada. Simply add a dollop of sour cream after step 5, garnish & serve.
• Try a fried egg atop each enchilada for a traditional & hearty meal.
• For La Posta Green Chicken Stacked Enchiladas, simply add 2 cups cooked and shredded chicken. Divide evenly (½ cup) to each plate after the second layer. Finish stacking with the last tortilla as directed in Step 3. Continue with steps 4 and 5.
